Celebration Cuisine - New Years Breakfast

Well, are you ready for a new decade? I know I've been working on it for the last few days. On Tuesday I shared my favorite way to mentally prepare for the new year by "Letting go" of negative memories and evens of the past and how to inspire yourself to create a great new year. Yesterday it was time to prepare for financial success in 2010. Today however, it's time for a little celebration. Some of you will attend New Years Eve parties, others may host them and(myself included)indulge in an intimate celebrations with loved ones at home. If you are hosting a celebration or simply enjoying a cozy night in on New Years Eve may I suggest serving some delightful nibbles either in the late evening or Midnight Breakfast Buffet (well, technically starting around 10:30 - 11pm until the early morning) or inviting guests over for a charming and casual New Years Day Brunch. Select a signature beverage (besides the celebratory Champagne toast) and some traditional breakfast flavors transformed into chic snacks. Here are a few of my personal favorites:

Bellini!
I'll be the first to say it... in my opinion Bellinis are the new Mimosa! This delicious Italian beverage is as simple as it is stylish.
1 part Peach Puree
1 part Sparking Prosecco (Champagne or Sparking Wine)


Mini French Toast Cups
Beat eggs, milk, a teaspoon of vanilla, a pinch of salt, Cinnamon, and sugar (or Splenda) together. Soak Cubed Potato bread, Challah Bread or any dense bread in the mixture. Spoon into a muffin pan that has been well sprayed with cooking spray and bake (at 350 degrees for about 15 to 20 minutes). Allow them to cool and serve at room temperature with warmed raspberry jam or maple syrup.... yum!!
Florentine Quiche Blossoms

Saute onions and garlic in a pan with butter. Add spinach, a pinch of nutmeg, salt and pepper (to taste). You may also add a pinch of red pepper flake however this is optional. Remove mixture from heat and allow to slightly cool. In a large mixing bowl add eggs, milk and shredded Swiss cheese. Add spinach mixture to egg mixture. Spray muffin/cupcake pan with cooking spray. Roll out a sheet of puff pastry and cut into 9 small squares. Tuck each square into a cup of the pan then pour mixture into pan. Bake at 375 for about 20 - 30 minutes or until golden and firm... enjoy!!

Are you ready for YOUR economic recovery?

Yesterday, in preparation for the New Year, I shared some of my favorite tips on how to mentally and emotionally "Let go & Create". That is, release those negative memories and events of the past so you may be free to envision, flourish and create a fabulous 2010. But for many the major "worries" in 2009 were somehow associated with the economy. I believe that "a set back is a set-up for a come back" and that anytime is a perfect time for a fresh, new start... and there's no better time than January 1st. Here's the best news, after an "Economic ression" comes a time of "Economic recovery" and most experts say it is just around the corner - you just have to be prepared so you can be one of those who will benefit from it. To help inspire and empower you for the new year I'd like to share some information recently broadcast on the NBC Today Show (on December 29th, 2009). It may be a quick (taking about an hour), easy and positive step towards a prosperous 2010!

Time to let it go!

Ah, its the end of another year... ooops, I mean decade. Did you know as I write this hundreds gather in the bustling streets of New York City for "Riddance Day"? Yep, people of all ages and backgrounds are writing down what they want to "let go" or "get rid" of (metaphorically speaking) before the New Year begins and tossing those papers into a giant shredder.

For 3 years this event has grown in popularity perhaps because it seams to be cathartics experience for those who participate. Just image, you write down the things that troubled you, those bad memories of the past year; that car payment, that "Ex", that illness, etc. and then you witness those worries disappear - destroyed right before your eyes. New years has always been a time for resolution and new beginnings but it is difficult to truly focus on making positive changes in your life without letting go of the negativity and issues that you feel held you back. So, ready for that fresh, positive state of mind and start but you're not in the "Big Apple"? Don't worry, try these 5 Simple Steps to "letting it go" and start the year (and new decade) off right!

Face it!
You only need a pen, a piece of paper and all those bed memories. Just take a few minutes to write down your personal worries, issues, and negative situations take occurred in your life over the past year (or decade). They can be as major or as minor as you like as only as they were events in your own personal life. And yes, this is a time of forgiveness. I once heard someone say that holding on to a grudge is "like drinking poison hoping the other person will get ill"... let it go.

Release it!
This would be a great time to use that shredder in your home office but for me, I love a good old fashion fireplace. Whatever you do make sure it is completely destroyed, beyond recognition, and you witness it.

Create it!
Now that you've released that negative baggage it's time to focus on positivity, goals and the joy in your life. In another letter, (yes, again no email or text or word application... just pen and paper) write down at least 10 completely positive things you are grateful for in your life right now. Good health, friends who care about you, reliable car, a cute smile, a roof over your head, a boyfriend, girlfriend or best friend that makes you laugh, a cozy bed, etc. Follow that up with at least 10 more things you are looking forward to having or doing in 2010. These are different from Resolutions these are specific items you already have on tap. They can even be the simple things you are looking forward to that will occur in the new year; birthdays, Sunday dinner with a relative, a friend coming home, completing an exam successfully, shopping with a friend, getting your hair done, Superbowl party (see guys I didn't forget you), your kids first day of school, Girls night out, going to the beach on the 4th of July, going to a concert, etc.

Mail it!
Ok, remember those things call postage stamps? You know, before texting and emails people actually mailed letters to each other. Well, place that letter you wrote to yourself into an envelope, stamp it and mail it to yourself. Do it before New Years Eve so it will arrive in 2010. You can open it on New Years day or you can hold off for a week or two. I would suggest opening it before the end of January but no mater when you open it be sure to do the last step.

Post it!
Post your letter! In your office, your bedroom, anywhere just as long as it is someplace you will see it every day! Remember to review it and think about the things you are grateful for. It should help keep you inspired... so start writing!

Cocoa with a Toasty Twist!

Burrr... Wow, it is sooo chilly outside. The good news is this is a perfect time to gather together and cherish the warmth of family and friends. I'd like to offer a few toasty, cozy hot cocoa recipes and some creative flavor ideas (or "Twists") to add to the comfort, enjoy and even a "Toasty Twist" of the season.

Basic Hot Cocoa
4 c Milk
1/3 c Hot Water
1/4 c Unsweetened Cocoa Powder (Preferably Dutch Cocoa)
2/3 c Sugar (or Splenda or Splenda Blend)
1/2 teaspoon Vanilla Extract
Pinch of Salt
Whipped Cream (optional)

Add a Toasty Twist!!
*Spiced Flavor Choices (Choose ONE of the following flavors)

Orange -2 tablespoons Orange Zest (in tea infuser, tied-up in a coffee filter or cheese cloth)
Mocha -10 to 20 Whole Coffee Beans (in tea infuser, tied-up in a coffee filter or cheese cloth)
Cinnamon - 2 Whole Cinnamon Sticks
Mint - 4 to 6 Fresh Whole Mint Leaves
Aztec -1 to 2 Whole Dried Chili Peppers (in tea infuser, tied-up in a coffee filter or cheese cloth)

Pour milk into a medium sauce pan over medium to low heat. Bring to a slight simmer. *Add one of your chosen "Spice or Flavor Twist" to the milk and allow to steep for 5-8 minutes or longer for stronger flavor(optional). Meanwhile, add hot water, cocoa and sugar, Splenda or Splenda blend to another sauce pan over medium heat. Bring to a boil while whisking until ingredients are dissolved and smooth then reduce heat. *Remove (or scoop) flavor elements from the milk. Pour milk into cocoa mixture then add Vanilla, salt and stir to combine. Serve in a mug with a dollop of whipped cream (optional) at a comfortably hot temperature...

Creative and Crafty

The countdown is well under way.... 5 days until Christmas and counting! Many are executing holiday plans, baking delightful goodies, displaying festive decorations, stringing twinkling lights and, of course, facing that final (or for some 1st) round of holiday shopping. I've never been one for braving congested parking lots and sworming crowds on Black Friday to hunt for the "best deals" but for the 1st year I could remember I did this year. Oh, don't get me wrong, I didn't hop out of bed at the crack of dawn to be the 1st in line but I journeyed out that afternoon to attempt to find one or two items.

If battling the cold and the store are unappealing and you want to give something exceptional to someone special consider creative crafts and original artwork. Visit a local gallery or professionally frame a special photo. It may not be to late to visit places like http://www.etsy.com/ for cool and creative gifts (although you'll have to check on overnight shipping options). I've personally made some original pieces like hand-sculptured clay flowers (Roses) and hand-painted stemware (Martini glasses). Not artistically inclined? Don't worry, there are other option just be creative... I'm not sure there's anyone who would turn away a fresh batch of homemade cookies and a gift card.

Truffle Treats


I recently attended a holiday event at a local Chocolatier's shop (The Royal Chocolate in Virginia Beach, VA). It was a delightful evening designed for a little networking and a little chocolate tasting (I love mixing business with pleasure). I even had a chance to flex my culinary knowledge regarding the history of chocolate (Yes, I'm a not so closet Foodie). Perhaps it's my love of most (o.k. all) things chocolate or it's the holiday season's tendency to let us throw caution and calories to the wind but I'd like to share my personal recipe for simply sweet and semi-classic...
Chocolate Truffles

16 oz Semi-sweet or Bitter-sweet chopped into small pieces ( or chocolate chips)
1/3 cup heavy cream
1/2 teaspoon Vanilla Extract
Pinch of salt
1/2 tablespoon Orange or Peppermint Extract (optional)
Cocoa Powder (for coating truffles)

In a small saucepan heat cream with a pinch of salt to a simmer (be careful not to burn or scald). I a large, wide bowl pour the chocolate pieces or chips. When the cream is almost at a boil pour over the chocolate. Allow to set for about 30 seconds to a minute and then whisk together allowing the heat from the cream to melt the chocolate. Add vanilla (and other optional extracts) to the mixture and combine. Once smooth place in the refrigerator to chill and set-up (at least an hour or so). Meanwhile, place Cocoa Powder in a wide, shallow container. Remove chilled chocolate mixture from the refrigerator, scoop with a tablespoon and roll into 1" balls. Roll the chocolate balls into cocoa to coat. You can serve on a platter or place a few in cellophane bags tied with a satin ribbon and give as gifts.... Enjoy!!

Holiday Table Ideas: Sight, Smell and Spirit

Ah the holidays and you know what that means... home entertaining. Here's the 1st of a few creative Holiday table decorating (and later serving) ideas.

For those of you how enjoy decorative projects consider re-purposing old clear vases and glassware by painting them. Use speciality glass paint and create fun and festive table decor elements that can double as gifts or favors.


Another simple table decor idea that is sure to warm the heart are picture frames. We all have tons of old pictures tucked away in closets, drawers or trapped on our digital camera. This is the perfect time to display them. Gather together all of your childhood pictures, pictures from holidays past, or pictures of dear relative who are no longer with us -the more the better. Small photos such as 4" x 5" or even smaller are ideal for this. Next choose a selection of frames - this is the perfect time to use frames that don't match, that very is size, shapes and style. The key will be to have them in the same color scheme. I love using neutrals and metallic colors. Head to a discount story and grab those clearance aisle frames. Don't worry if they don't match - a quick trip to the hardware store, a can of spray paint (perhaps in white, silver or gold) and you have an eclectic and beautiful collection of frame. Just remember to follow spray paint instructions and work in a well ventilated place. Now, place your pictures in the frames and cluster them on the dinner table, place infront of each guest, or arrange them in a row, varying in height - this will not only create visual interest and rhythm but the illusion of a runner down the center of your table.

Not the artistic type... no problem. Try this simple decoration - a fantastic alternative to plain or expensive scented candles. Fill vases, small containers or event tumblers and wine glasses with ground coffee (this also works well with cranberries or even cloves and cinnamon sticks). Then nestle a tealight, votive, or small pillar candle in the center. It creates an elegance table element for any holiday dinner table and as the candle warms the coffee the scent of coffee will begin to waft through the air. By the end of the dinner guests will certainly be ready for coffee and dessert.

I've gotta feeling...

Just as many of us, my heart goes out to the Solders and Families of those effected by the recent tragedies in Fort Hood and Florida. I'm not alone in thinking that with the approaching holidays this should be a time of hope, love, comfort, family, friendship and celebrations. Instead many are reflecting on life and loss. Sitting by bed sides, waiting for phone calls, reminiscing and asking "why"? Unfortunately, those answers are not easily found (at least not by a simple little weddings, events and design blog). I, like so so many others, are only able to send my prayers and support to those going through such times.

In a time of such sorrow I find it helpful to remember that these are the times where we as humans can be at our best, where we can show how strong, courageous, resilient, compassionate, optimistic, and yes, loving we can be. Fear, hatred and negativity can be infectious but the good news is so is hope, positivity, joy, strength and inspiration - pass it like cold. As the we grow closer to Thanksgiving I ask that we commit to connecting and sharing joy. Be a little kind, cherish each moment, laugh more, hug a little longer, say a kind word to someone who may need to hear it, sing for no reason (even if it's just to yourself), share enthusiasm, joy and good spirits. And oh yah, it you get a chance dance a little (even if it's just in the living room by yourself when no one is home).

A "not so" Secret Garden in Downtown Norfolk

There's no secret that I love theme and culturally influenced event designs and transporting guests into an entirely different world through a dynamic visual experience. Sometimes creating the theme requires transforming an event space into an environment that reflects the theme but sometimes there are environments that can transform the event. I had the pleasure of experiencing one of these locations last night at an event at the Pagoda Tea House and Oriental Gardens in Norfolk, Virginia.
Nestled in the heart of Downtown Norfolk, overlooking the simmering waterfront of the Elizabeth Rive is an exotic Asian escape. This beautiful landmark building and lavish oriental garden offers an incredible backdrop for any event - especially weddings. The landmark Marine Observation Tower turned stunning restaurant, dinning facility, and gallery is truly unique.
The venue is home to a breathtaking Oriental Garden featuring the state's largest Koi pond, tranquil Asian-inspired sculptures and landscaping, and over 130 species of plants, trees and flowers including lotus flowers, floating water lilies, Bamboo, Flowering Plum and Japanese Black Pine - perfect for an enchanting wedding. In addition, the facility offers a large outdoor brick patio event space overlooking the Elizabeth River (which may be tented), giving event planners and event designers ample room to create an exceptional waterfront experience for guests.
Although the on-site restaurant has a spectacular Asian-theme menu they are also excited to offer other varied and creative catering options. In fact, at last night's event I enjoyed a delightful four course food and wine tasting - pairing a different wine with each course. Thanks to the tremendous popularity of contemporary, smooth crooners like Michael Buble, John Legand, and of course Harry Connick Jr. and swell shows like "Mad Men" and the visually stunning techni-color (although now canceled) "Pushing Daisies" the vintage look of the 1950's and 60's is rapidly capturing the imaginations of Brides, Party Hosts and Event Designers. For the Bridal Couple who lean towards an eclectic, classic, or glamorous style consider introducing vintage themes and elements into the design of your special day.

Arrive in style! A Chauffeur driven classic car not only sets a vintage tone for a Bride and Groom's arrival but offers an idea photo op for Bridal pictures.

The Booths can be programed with the Bridal Couple's names, date and/or other special logos to share a special message with those attending the event. Guests will have a blast taking pictures and (of course) taking those pictures home!

Creative Collaborations: From Event Art to Ice Art

I love having the chance to work with other creative people. As a Fine Artist and Event Designer I find that collaborating with other event professionals is a fabulous way to become inspired while inspiring others with new ideas and perspectives. I've had the pleasure of recently doing just that.

For years Ice Art Inc in Virginia Beach, Virginia has established itself as the Hampton Roads area's premier Ice Sculpture company. Oh, but these aren't you're standard ole' swan sculptures. They can truly create anything you can imagine. From dramatically lit statues to entire cocktail bars made out of ice! They are a joy to work with and Steve Latham's talent in this craft is simply amazing. He can easily convert my custom illustrations into stunning works of "ice art". Want an example? Tablescape Design - Blue Garden

Based on a watercolor illustration I created only days earlier I recently created a stunning table in hues of blue, violet, and green.


The Centerpiece was a statuesque design conveying a fluid vertical line. A fresh, fragrant runner was made from Mums, Roses, Hydrangea, and Iris.


Hydrangeas adorned with our shimmering mascot, the butterfly, embellish each chic, sleek "Ice" Lucite Ballroom chair.


Each place setting was carefully dressed with a Cobalt Blue Charger and Flower Folded Napkin with a radiant center.

Event Pros & Partners: Williamsburg Wedding Design

One of the things I love about this industry is the opportunity to meet and work with people who are professional, fun, talented and a joy to be around. Well, I recently had the pleasure of "doing coffee" with just such a person.

For several years now Shayna Walker, of "Williamsburg Wedding Design", has used her expertise in the hospitality industry to establish herself as one of the Williamsburg area's premiere Wedding Planners. As someone who grow up in the tourism industry myself (working for the state of Virginia for the Jamestown-Yorktown Foundation as a teen) I can certainly understand the unique challenges she faces. Top 5 Wedding Day Emergency Kit Must Haves

Have you ever heard the old Cub Scout motto, "Be prepared". Now, I've never been a Cub or a Scout but as a coordinator I, like most professional coordinators, come to a wedding armed with an emergency kit. My kit, of course, is a collection of products and tools I find essential for dealing with any unexpected situations that pop up and turning potential issues into achievements. Usually, every kit is different because every kit should have the tools the professional feels work best for them. Would you like a peek into my kit? I'll forgo my funky favorite items (i.e.: duct tape, staple gun, etc.) but I will share my top 5 list of "must haves" for a Bride's big day:

Clean & Clear Oil Absorbing Sheets

It's moments before you walk down the aisle. The dress - gorgeous, hair - perfect, and the make-up is flawless. You are a stunning, vision to behold and you should remain so the entire day. Unfortunately, especially for Bride's with oily skin, that may not be so easy as it sounds. Every Bride should glow on her special day but perspiration could destroy beautiful make-up and a shinny face doesn't take the best picture. I keep Oil Absorbing Sheets by Clean & Clear close by so the Bride may discretely blot the her face before pictures and throughout the event.


Tide to go

Is your wedding gown White, Ivory, Cream, or even Blush? Most Brides dream of the perfect dress however, one drop of soda or wine could taint the most breathtaking gown. If find the small "Tide to Go" minis easy to carry. I keep them and a small hand towel on hand just in case wedding cake finds it's way to the train of the gown.





Bounce Dryer Sheets

O.k., I know it sounds funny but yes, I keep Bounce Dryer sheets in my emergency kit. And no, I don't plan on doing laundry during the reception but for outdoor weddings these sheets are great. Rub a sheet over a gown or tuxedo, stuff a sheet in a back pocket, or nestle one discretely in your undergarment. The dryer sheet will repel insects without the smell of bug sprays or messiness of lotions that stain.


Scotch Lint Mini Rollers
Like the song said, "Every Girl's crazy 'bout a sharp dressed man". I admit, I love the way men look in a well made and fitted tuxedo. Of course, nothing takes away from that look than dozens of little white spots on a crisp, dark jacket. It only takes a few seconds and a couple of quick swipes with the Scotch Lint Roller to give the Groom his swagger back.





Colgate Wisps

"You may now kiss the Bride!" Breath mints are great to refresh your breath during the day but after a meal a quick brush may be in order. From the first kiss as 'Husband and Wife' to the first kiss after the reception dinner I've discovered that Colgate Wisps are a handy little item to quickly keeping my Client's teeth bright and breath fresh... smooches!
O.k., that's enough... can't give away all my secrets.

Why the Dancing Wedding Precession (entrance) was a hit!

If you haven't seen it, don't worry you will. Check your inbox at work and your emails from your family or friends - odds are someone has forwarded it to you... "JK Wedding Entrance" video. Almost overnight the video (which can be found on YouTube.com) has become a worldwide hit! This video featured an ultra energetic Bridal party turning the aisle at a wedding into a not so impromptu dance floor as they performed a semi-choreographed routine down the aisle to Chris Brown's "Forever". The video of the precession has even made to mainstream news and media outlets like Today on NBC.





So why has this wedding processional video created fans all over the Globe? I believe it boils down to one idea... we are sick and tired of bad news and people like feeling good! Weddings, by their very nature, are usually joyous occasions designed to nurture feelings of a new beginning, care-free fun, of hope, reassurance, and of course love. These themes are no only showcased in the video but seem to be amplified by the participates (including the wedding guests who immediately join into on the fun).



Oh, don't get me wrong, there is something timeless, romantic, and enduring about Cannon in D major playing softly in the distance to herald the coming of the Bride but we seem to live in a time when we are all bombarded by News Casters and Politicians pouring out an endless stream of economic statistics that seem to focus on the worst. Most of us have "economy information overload" and as we impatiently (very impatiently) try to ride-out the global changes there is something up-lifting about seeing people having so much unrestrained fun. Family and friends letting go and sharing in the unbridled gleefulness of the moment, of the day, and having fun - it's simply infectious. No wonder the video has been seen well over 6 million times in the short 6 days it's been posted.



I've seen it at least 3 times myself and I have to admit, I still get a smile every time I see the Bride dancing down the aisle at the end of the video; bouquet held high in the air, meeting her Groom midway, and the two of them two-stepping their way to the Officiant. The lesson: Let's stop worrying so much about life's (and the economy's) temporary status. Things are going to get better... there's hope, comfort, and great times to be had right now so enjoy love, family, friends, freedom, and life with reckless abandon!

Romance in the Sun - Table in bloom!

Nestled away in the rolling landscape of Historic Williamsburg Brides and Grooms recently gathered to experience a little "Romance". I had the sincere pleasure of participating in yesterday's "Romance in the Sun" Show Brides Bridal Show at the elegant Colonial Heritage Club in Williamsburg, Virginia. The Colonial Heritage Club, moments away from fun and fabulous outlet mall shopping, hosted a delightful wedding show. Our booth, featuring a fresh and deliciously exquisite color combination of vibrant tangerine, lime and lemon, was the talk of the event.

Before
As always I began with a concept illustration laying out the design to created. I displayed this "Before" drawing on an easel in the corner of the booth I called "The Gallery" and invited Brides to come in look at the "Before" and "After" and participate in a survey for a chance to win a fantastic gift!



After

A vivid lime green cloth was draped with a crushed orange overlay and the table was elegantly accented by the rich gold ballroom chairs.




The place settings were layered in gold, white, lime green and burnt orange. The luxury accent? Handmade napkin rings adorned with a stunning, live sunset colored roses in full bloom and embellished with a crystal.

The centerpiece was an lavish arrangement of fresh fruit and flowers. Lanterns not only added a romance element but delicate, warm light. Three tiers of robust cluster of roses, lilies, and mums created height and a floating, cascading effect over the table. This feeling of height was only enhanced by a handmade hanging chandelier adorned with flowers and suspended candles.

Of Wine and Waterford: Part IV Everyday Celebrations!

As we come to the last in our four part series featuring our Fine Crystal Education Resource Waterford Crystal, "Of Wine and Waterford", I can't help but take stock in this splendid time of year and of summer entertaining. A season that seems ideal for casual and chic outdoor entertaining and all the fun that can can bring.

I admit, I've cherished many of those relaxed yet stylish gatherings. A cool comforting breeze greeting guests on a warm summer evening. The sunset painting the sky a delicious array lavender, pink, and orange as a group of joyful friends laugh and lounge on a patio or deck - indulging in cocktails. This is the season of the outdoor cocktail party. Planning a fun, sophisticated and even funky cocktail party has many components including knowing which glassware will complement the beverage and theme party decor.

Here is a quick Everyday Glassware Guide which will take you through the various cocktails and alike specialty beverage drinks for summer celebrations:

- Cordials & Liqueurs
- Decanter & Carafe
- Martini & Margarita
- Hiball & Goblet


Cordial & Liqueurs:

Specifically designed to enhance the body and bouquet of dessert wines or your favorite liqueurs. They can be fruity or even flavored to taste like candy.

Martini & Margarita Martini:

Delicate with a wide, shallow bowl. Also known as a cocktail glass. Margarita: Shaped to allow crushed ice to fall into the well while offering a wide rim for salt.

Hiball & Goblets:

Hiballs are cocktails that are made of 2 beverages (example Vodka and Cranberry juice). Hiball glasses can also be used for one soft drinks as well as one mixed drinks. Hiballs hold 12-16 ounces and are also good for iced teas. Like Hiball glasses, Goblets are used to serve non-alcoholic drinks such as water or ice tea. Goblets (also referred to as Water Goblets) are usually the largest glass at a table setting and mot basic glassware you'll find on a table.

Decanter & Carafe:

A decanter is a container for keeping and/or serving spirits or wines. Decanting enhances many wines. Typically decanters have a stopper to prevent air from entering the chamber. A carafe is an open-top container with sides fluted outward at the top. Perfect for serving wine or even sangria - the fabulous summertime beverage!
